A new restaurant geared toward students is opening on West Adams Street that aims to have something for every student’s taste buds.
Chubby’s will open on Nov. 1 at 320 West Adams St., the former home of The Phoenix record store. Co-owner Tammy Yates said that Chubby’s will deliver a variety of different dishes to fill hungry stomachs.
“We have Italian beef, and there’s going to be some southern dishes,” Yates said. “It’s comfort food — cheap, good, delicious comfort food. We have hot dogs, burgers, grilled chicken, wraps and salads.”
Yates has been in the restaurant business for 26 years. She and co-owners Chad Hunziker and Mark Freetly drew on their own college experiences when putting together plans for Chubby’s.“We’re drawing from my
college experience at University of Kentucky and the things that we had around campus,” Yates said. “Here in Macomb, there’s really not anything geared toward students.”
Hunziker, who attended the University of Missouri, has been living and working in Macomb for 12 years and said that Chubby’s is something this town needs.
“I think it’s a good mix,” Hunziker said. “We get to know students it’s an atmosphere we want to be involved in. Tammy loves college towns, and it’s what we like. I just enjoy being around students.”
Because of this, Hunziker also said that students should be able to have input. “If there’s something that students want, we’ll try to incorporate that,” he said. “We’re going to be listening to students. We obviously can’t put everything in that someone wants, but we definitely want to listen. That’s what makes it successful you find out what people want.”
The three co-owners have been remodeling the building for the past three to four weeks, and Hunziker said students walking by have asked about Chubby’s menu and opening date.
“We’ve had a lot of excitement already,” he stated. A couple of Western students said that they are excited and intrigued about a new restaurant coming to town.
“It’ll be a nice upgrade for the town,” said broadcasting major Temple Holmes. “It will be kind of cool.”“We need more variety in this town,” added Western student Katey Briggs. “It’ll be nice to have a diverse menu like that.” Hunziker said he expects Chubby’s to be successful in Macomb.
“We have the building, a great location, a great product, and we think it’s a great opportunity and we wanted to take advantage of that,” he said. Chubby’s will be open daily 11 a.m. to 11 p.m., with additional hours Thursday through Saturday until 2 a.m. There will be an after-hours serving window with an abbreviated menu to make ordering easy and fast. There will also be a patio and outside deck.
“That’s how we’re going to start off, and we’re going to make it work,” Hunziker said. “We’re going to try it all, and if it doesn’t work, then we’ll try something else. If we need to change something, we can. We’re not opposed to change; it’s all trial and error.”
